Sfiziose colombine di pan brioche salato rese speciali nella forma e grazie all’aggiunta di un tocco di dolcezza con le Prugne della California.
Parliamo del pranzo di Pasqua: avete già scelto quali ricette preparare? Il menù è deciso?
Per me due certezze:
1. Il dessert: colomba e, se i tempi lo permettono, ovviamente pastiera
2. Niente agnello.
Voglio un menù di Pasqua diverso dal solito, che sappia di primavera, che sia bello e anche un po’ bucolico.
Sì a risotto con le ortiche o ai nidi di tagliolini con pesto di asparagi. Sì a torte salate con i bruscandoli e magari anche a qualcosa di bello che faccia dire “E’ proprio Pasqua!”.
Quest’anno trascorrerò questa festa in campagna, in mezzo ai campi, in una zona in cui la domenica si mangiano ravioli e l’antipasto è sempre un tagliere di salumi tipici, eccellenti in questo territorio.
E’ così che questi ultimi diventeranno protagonisti della nostra tavola ma, per l’occasione, avevo bisogno di qualcosa che rendesse l’antipasto diverso dal solito, speciale.
Ricordandomi di queste deliziose brioche, ho pensato che trasformarle in versione salata non sarebbe stata affatto una cattiva idea per il mio antipasto di Pasqua.
Nell’ottica di portare in tavola qualcosa di veramente particolare le Prugne della California mi sono venute in soccorso: sapete quanto stanno bene con i salumi e i formaggi?
Un tocco dolce che ben si sposa con il Salame di Varzi o con una fetta di coppa.
In questo pan brioche salato, la dolcezza delle prugne unita alla sapidità del pecorino regala contrasti davvero piacevoli; la consistenza è soffice e leggera, quasi da prendere il volo! 🙂
A guardarle vi sembrerà difficile, ma in realtà preparare questo pan brioche salato a forma di colomba è davvero facile e veloce!
Seguite le indicazioni, guardate le immagini e vi ritroverete in un attimo con le vostre colombine pronte per essere infornate.
Per un’idea in più servite le colombe in dei nidi di raffia. Riempite la tavola di colori pastello e vi ritroverete circondati di primavera!
English Version – Easter doves salted brioche with California plums
Ingredients:
250 g of Manitoba flour
250 g of 0 flour
15 g of brewer’s yeast
an egg
250 ml of milk
50g butter
50 g of grated pecorino cheese
8-10 California Plums
a teaspoon of sugar
a teaspoon of salt
egg yolk for brushing
Direction:
Melt the yeast in the milk at room temperature.
Pour two thirds of the flour in the bowl of the planetary or form a fountain with the flour if you knead by hand.
Add the milk in which you have dissolved the yeast, sugar and start working. Combine the egg and, once blended, add one part of flour and knead until the dough is smooth and glossy.
Then add the butter cut into small pieces, do absorb and add the remaining flour. At this time also add salt and pecorino.
While the planetary knead to have a smooth and elastic dough, chop the prunes with a knife.
Reduce the speed of the mixer and add the prunes.
Let the mixture to blend, then shut off, form a ball and place it to rise in a warm place sheltered from drafts.
You can also prepare the dough by hand following the order of addition of the ingredients.
Let rise until doubled and then proceed forming the dove.
Divide the dough into pieces of about 85 g of which 70 g will serve to form the body and 15 g for the head.
Make sure to keep always covered the dough so that it does not dry out.
To form the body roll out the dough into a cord of about 25 cm and slightly crush the ends. At this point you tie a knot as you see in the picture.
For the head form a ball and with the fingers stretch a little bit in order to form the beak. Stretch well because when cooked it will swell and will tend to shorten.
Wet the surface on which it will be resting on the head and glued latter.
Arrange the little dove on a baking pan lined with baking paper and then gently cover with film paper.
Let rise for about an hour until the mixture slowly retract when you applying light finger pressure.
Before baking press and elongate beak, brush with the egg and cook in oven at 180 ° C for about 30 minutes, until golden.
Let cool before serving.
These doves are perfect to accompany cured meats, terrines or patè.
